What's the difference between a jelly roll pan and an insulated cookie sheet?

Which gives superiority results for roasting cut potatoes? Would using a cookie sheet make turning the potatoes unnecessary? Thanks.


You would purposes need the jelly roll pan for the potatoes because any fat on the potatoes needs to stay in the pan. The cookie sheet has no sides. Also the insulated cookie sheets do not seem to brown as well on the bottom as the sheet pans do.


The natural difference is the sides on the pan. The jelly roll pan has small sides & real cookie sheets don't have any sides so its easier to eliminate the cookies. Using either pans to roast potatoes would be fine. Just make sure none go over stay!


Not a legitimate difference for roasting potatoes, but I would turn them to brown them more evenly. I would also grease the pan or put tin foil under the potatoes and grease the flake.


Insulated cookie sheets don't have sides. Jelly wad pans have a little bit of a side. Use the jelly roll pan, the potatoes will fall off the insulated sheet. Yes, you need to turn the potatoes.

I have had these "air " or "insulated" cookie sheets forever! Undoubtedly over 25 years!!! I think maybe I should invest in new ones-the ads for these originally said that cookies will not itch-Does anyone have an idea or the best cookie sheet around?


Keep them and if they ever start to desire your cookies start using parchment paper to line them with. I have the rattiest, tattiest pans but my cookies lay hold of out perfect. Parchment paper is impregnated with silicone (slipperiest substance possible) and when I bake cookies they fly at out with almost no color on the bottom...perfect! I even reuse the parchment paper for more than one batch in the same day.

Does auluminum, steel or insulated cookie sheet bake cookies better so it isn`t black on the bottom?
