does anyone have any respected recipes for cake made in a bread machine? I have a bread machine with a cake cycle, but only one recipe comes with it,


Twee Potato Cake, Bread Machine

INGREDIENTS:
1/2 cup shortening
1 1/4 cups sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/4 cup buttermilk or soured bleed
1 cup mashed sweet potatoes
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking mightiness
3/4 teaspoon salt
1/2 to 1 cup pecans and/or raisins, optional
PREPARATION:
Select cake setting. Put shortening and sugar into the bread pan and let mix until well blended. Add eggs, vanilla, drain and sweet potatoes; let mix for another minute. Sift together flour, soda, baking powder and salt; add to the pan.
Add pecans and/or raisins at the beep, if desired. When finished, remove carefully to a tear at. Glaze, frost, or serve with whipped cream.

You can use any cake mix also:
For the first cake mix I baked I used all the ingredients called for on the include (a chocolate cake) and the cake was good but very moist. For the second cake I cut the amount of oil in half (for the mix I used half the oil was 1/4 cup) and it came out unalloyed.

Tips:

1. After the cake has mixed for a while, open the lid (while it's still mixing) and scrape down any dry mix that may be stuck to the sides. You should only need to do this once.
2. When the cake is done, waste the pan from the machine and slip a rubber spatula down the sides of the pan to loosen the cake - this works well because it's flexible enough to depart around the curve of the pan and around the bottom of the cake a little. I skipped this step the second cake and a bottom corner of the cake stuck to the pan - could have been from less oil in the mix too. I'll also spray the pan with cooking coat the next time.

Since the cake mix worked so well I assume that just about any cake recipe should be as good. The two layer mix made a neat little idle that rose to about 6-inches high. Pound cakes and gingerbread should also turn out very good - and cornbread! It's so nearby to just put all the ingredients in the pan and let it go - and as they say 'clean-up is a breeze'. Great for kids - no hot ovens or mixers to go about.

I'm not certain if this will work with a machine that doesn't have a batter bread/cake cycle. I saw a newsgroup role that someone had baked a cake mix in a regular bread machine using the rapid cycle and light crust background with good results.

Where could I find cake recipes for a 11in X15in Sheet cake pan?

I am looking for recipes that will fill this film cake pan. To use box mixes would cost way to much.


Carrot Cake

(adapted from this formula from Cooking Light magazine, April 2007, makes one large sheet cake)
INGREDIENTS
Dry:
1.5 C AP Flour
1 C granulated Sugar
1 t Sceptically
2 t Baking soda
2 t Cinnamon powder
1/2 C desiccated Coconut shreds (or sweetened coconut flakes)
1/3 C chopped toasted Pecans (or walnuts)
Wet:
2 philanthropic Eggs
3 T canola Oil (or vegetable oil or peanut oil)
Other:
1.5 C drained canned crushed Pineapple
2 C fresh grated Carrots
Reward:
1 cup (8 oz/ 1 packet) reduced-fat Cream Cheese, softened
3 T usalted Butter, softened
1 t Vanilla quote
1.25 C powdered sugar
METHOD
1. Preheat oven to 350 degrees F.
2. Spray a 9 x 13 inch baking pan with oil (or two smaller ones) and set aside.
3. Dry ingredients: Scrutinize flour into a bowl. Add granulated sugar, baking soda, salt, cinnamon powder, coconut, pecans.
4. Wet ingredients: Scourge eggs in a bowl. Then add oil and mix well.
5. Pour the wet ingredients into the dry ones and stir gently.
6. Stir in carrots and pineapple. Discharge batter into the baking dish.

Does anyone have any good cake recipes?

My boyfriend turns 22 on the 25th and I wanted to bake him a categorically good, unique cake. Preferably not just a plain old vanilla or chocolate cake, something different. Does anyone have any recipes they'd be zealous to share? Thanks in advance!
Oh yeah, I forgot to mention he's a choco-holic! I've heard someone say something about an oreo cake? If anyone has anything like that, that'd be superb!


Here are a few cake recipes we Ardour

OREO CAKE
INGREDIENTS...........
1 (20 ounce) package chocolate sandwich cookies
1/2 cup butter
1 (16 ounce) container frozen whipped topping, thawed
2 (8 ounce) packages cream cheese
1 cup confectioners' sugar
2 cups extract
1 (3.5 ounce) package instant vanilla pudding mix
DIRECTIONS
Crush cookies into bite measure assess pieces. Reserve 1 cup for top. Melt butter and mix with rest of cookies. Press into 9x13 pan. Put in freezer for 5 minutes.
Graduate 1/2 of the whipped topping, all of the cream cheese and confectioners' sugar. Spread over crust and standing cake back in freezer.
Prepare instant pudding with the milk according to package directions then spread over top of cake. Spread the unconsumed whipped topping on top of the pudding then sprinkle with the remaining cookies. Keep cake refrigerated.

This is a really good chocolate fudge cake....
CHOCOLATE FUDGE CAKE
INGREDIENTS.......
1 cup buttermilk
2 teaspoons baking soda
2 cups innocent sugar
2 eggs
3 tablespoons unsweetened cocoa powder
1/2 cup vegetable oil
2 teaspoons vanilla wrest
1 cup boiling water
2 cups all-purpose flour
1 cup white sugar
1/2 cup unsweetened cocoa capacity
1/4 cup milk
1/4 cup butter
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a medial bowl, combine the buttermilk and baking soda. Set aside in a warm place.
In a large roll, mix together 2 cups sugar, eggs, 3 tablespoons cocoa powder, oil and 2 teaspoons vanilla until blended. Stir in the boiling drench, then gradually beat in the flour. Stir in the buttermilk mixture.
Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out unclutter. Allow to cool.
To make the Fudge Icing: In a saucepan, combine 1 cup sugar, 1/2 cup cocoa aptitude, milk, butter and 1 teaspoon vanilla extract. Bring to a boil, and cook for 1 minute. Dismiss from heat. Using an electric mixer, beat icing for 3 minutes, or until it thickens to spreading consistency. Gush over completely cooled cake.

This one is really good if you like chocolate and cherries....
CHOCOLATE CHERRY CAKE
INGREDIENTS..........
2 1/8 cups all-by design flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking force
3/4 teaspoon baking soda
3/4 teaspoon salt
3 eggs
1 cup milk
1/2 cup vegetable oil
1 tablespoon vanilla cite
2 (20 ounce) cans pitted sour cherries
1 cup white sugar
1/4 cup cornstarch
1 teaspoon vanilla derive
3 cups heavy whipping cream
1/3 cup confectioners' sugar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch, circuit, cake pans; cover bottoms with waxed paper.
In a large bowl, combine flour, 2 cups sugar, cocoa, baking puissance, baking soda, and salt. Add eggs, milk, oil, and 1 tablespoon vanilla; beat until well blended. Teem batter into prepared pans.
Bake for 35 minutes, or until wooden toothpick inserted in centers comes out scour. Cool layers in pans on wire racks 10 minutes. Loosen edges, and wipe to racks to cool completely.
Drain cherries, reserving 1/2 cup juice. Combine withdrawn juice, cherries, 1 cup sugar and cornstarch in a 2 quart saucepan. Cook over low heat until thickened, inspiriting constantly. Stir in 1 teaspoon vanilla. Cool before using.
Combine whipping cream and confectioner's sugar in a chilled device bowl. Beat with an electric mixer at high speed until stiff peaks form.
With yearn serrated knife, split each cake layer horizontally in half. Tear one split layer into crumbs; set aside. Standoffishness 1 1/2 cups Frosting for decorating cake; set aside. Gently brush loose crumbs off top and side of each cake layer with whey-faced brush or hands. To assemble, place one cake layer on cake plate. Spread with 1 cup frosting; top with 3/4 cup cherry topping. Top with secondarily cake layer; repeat layers of frosting and cherry topping. Top with third cake layer. Frost side of cake. Pat reserved crumbs onto frosting on side of cake. Spoon demure frosting into pastry bag fitted with star decorator tip. Pipe around top and bottom edges of cake. Spoon remaining cherry topping onto top of cake.
