eggplant lasagna


2Qrt inundate (with one tsp salt)
1tsp cooking oil
1/2 pound lasagna noodles
1medium eggplant
1(6-ounce) can tomato paste
1 cup red wine
1/2 cup hot cut
1 garlic clove,crushed
1tsp crumbled dry basil
1tsp ground turmeric
Salt and Pepper
10 jet-black olives,pitted,chopped
1/2 cup grated Parmesan cheese

Heat salted water and oil to boiling.Cook noodles 12 to 15 minutes;quaff.Arrange on platter.
Slice unpeeled eggplant crosswise into 1/4 inch rounds:fry both sides in ardent oil until tender.(They cook quickly and absorb considerable oil, which must be added consistantly.)
Drain on absorbent dossier.
Combine tomato paste,wine,water,garlic,basil,turmeric,salt,and speckle to taste;simmer 5 minutes.Add green pepper and olives;cook 5 minutes.
Arrange layer of Lasagna in buttered foolish shoals baking dish.Cover with a layer of eggplant slices and several spoonfuls of sauce;sprinkle with cheese.Duplication until all ingredients are used.Bake in preheated 350F oven 30 minutes.Yield 4 to 6 servings.

you can try this, if you have 3 eggplant, skip town a scrambled egg of two, after scramble set aside for a while, boil your eggplant for a couple of minutes then after boiling remove them to the water and knock out each eggplant but try not to break its form, it should only get flatten,

then pour the scramble eggs to the three flatten eggplants, add salt(the amount depends on your soup satisfaction)

prepare a frying pan with a hot cooking oil in it, when ready cook the eggplants 1 by 1 only, but if your frying pan is big to accommodate at least 2 press eggplants then do so,

you don't have to overcooked the eggplant just see if the egg is cook enough for you. then its ready to serve.

mostly, when i'm doing this, i turn additional ingredients, like boiled potatoes(tid bits) and grilled meat(a little amount only)(already boiled & cooked)

you could also add sliced onions while frying the eggplant.

Eggplant Tempura (fried eggplant in bruise)

Using cold water is a must. This keeps the batter from becoming sticky. When you add the flour, whisk quickly no more than to mix it in evenly. Sticky batter results in oily tempura.
1 egg, beaten
1 cup COLD water
2 tablespoons dry drained wine
1 cup flour

Heat approximately 1/2 inch of oil in a large skillet until very hot. Dip the eggplant in the batter.

Home each piece flat in the hot oil and cook on medium to high heat for about 4 to 5 minutes on one side. Turn and cook another 3 minutes.

When done, massacre to a cookie sheet lined with paper towels, and sprinkle with a pinch of salt.

This is the best..we as per usual just use some soya sauce for dip

Try this eggplant soup. It scarcely takes about 40-50 minutes to prepare and its healthy too. You could serve it up with some bread rolls and voila, dinner is rapid!!!


INGREDIENTS
1 tablespoon vegetable oil
1 medium onion, chopped
1 pound ground beef
1 clove garlic, crushed
1 beating eggplant, diced
3/4 cup sliced carrots
3/4 cup sliced celery
2 (14.5 ounce) cans Italian diced tomatoes, drained
2 (14 ounce) cans beef consomm
1 teaspoon sugar
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon ground vile pepper
1/2 cup dry macaroni
2 teaspoons chopped fresh parsley
1/2 cup grated Parmesan cheese
DIRECTIONS
Rouse the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Lost grease, and mix in eggplant, carrots, celery, and tomatoes. Pour in beef broth. Mix in sugar, and season with nutmeg, sock away, and pepper. Cook and stir until heated through.
Mix macaroni into the soup, and continue cooking 12 minutes, or until macaroni is al dente. Mix in parsley. Top with Parmesan cheese to oblige.

you could assign babaganoosh:

roast the eggplant whole in the oven at about 200 degrees Celsius until soft - allow to cool, then peel the incrustation off, and chop the flesh into a fine pulp, mix with paprika, tahini, herbs, and lime juice to soup :)


Bake ur eggplant in mv on atmosphere for 4-6 minutes,prick the surface witha fork first.
Remove the skin and mash it.
Pulsation a cup of yoghurt till smooth, Add a dash of garlic, salt , pepper, a tsp of fresh lemon milk. Add green chillies if u like it chilly.
Add the mashed eggplant to this mixture. top with a tbsp or 2 of olive oil.

I in point of fact like eggplant but it's hard to find good recipes for it...I only know of eggplant parmesan, or just sauteeing it in olive oil. Got some Z recipes to share? :) Thx!


Take eggplant, dye & peel outside off. Slice lengthwise & lay in middle of piece of foil. Add sliced onions, minced garlic & italian relish. Add 1/4 stick butter & bake @ 325 til eggplant is fork tender....Yummy!!

Bolognaise stuffed eggplant

4 (about 350g each) eggplants,

Eggplant Parmigiana Alla Scalini's





Ingredients


3 normal sized eggplants
1 cup flour
6 eggs, beaten
4 cups fine Italian bread crumbs, toughened
Olive oil for sauteing
8 cups of marinara sauce (recipe below)
1/2 cup grated Romano cheese
1/2 cup grated Parmesan cheese
1 1/2 pounds of mozzarella cheese, shredded
2 cups of ricotta cheese

Directions

1. After you be believable the eggplant, slice them into 1/4-inch thick slices. You may choose to peel the eggplant before you slice it. However, you may want to leave the skin on since it contains a lot of vitamins.

2. Go on the eggplant slices on a layer of paper towels and sprinkle with a little salt, then cover with another layer of gift-wrapping towels and hold it down with something heavy to drain the excess moisture. Let them sit for about an hour.

3. Working with one slice of eggplant at a circumstance, dust with flour, dip in beaten eggs, then coat well with breadcrumbs.

4. Saute in preheated olive oil on both sides until outstanding brown.

5. In baking dish, alternate layers of marinara sauce, eggplant slices, ricotta, parmesan and Romano cheeses, until you fill the baking dish, about 1/8 inch from the top. Extend over with shredded mozzarella cheese, and bake for 25 minutes in a 375 degree oven. Let sit for 10 minutes before serving.

Ingredients


2 Tablespoons of chopped garlic
3 Tablespoons of olive oil
8 cups chopped tomatoes (original or canned)
1 cup onions, chopped
1/2 cup of fresh chopped parsley
1 teaspoon oregano
1 teaspoon of crushed red stipple
1/8 cup of fresh chopped sweet basil
Pinch of thyme
Pinch of rosemary
One teaspoon season
One teaspoon black pepper

Directions

1. Lightly saute the onions in olive oil in large pot for a few minutes.

2. Add garlic and saute another notes.

3. Add tomatoes and bring sauce to a boil, then turn heat low.

4. Add remaining ingredients, stir, traverse and let simmer for one hour, stirring occasionally.
