a must have for every straight with cook
From beginners to advanced cooks, this is a must have for everyone unsound to cook Mexican dishes. Marge Poore writes to teach and in such a way that i didn't want to put the book down. I wanted to keep reading the cook list! I do however, recommend buying this in hard cover, not on kindle, which is difficult to skip to sections and recipes. I am, therefore, making the remarkably purchase to get the paper copy.
Huge recipes / Bad Spanish
I have moral received 1,000 Mexican Recipes in the mail. I am very excited to try out several of the recipes. But I am reading the Spanish translations as I leaf through the book and I am unhappy. There are so many errors in the Spanish.
I am a Spanish teacher. Why could not Marge and Bill Poore have hired me or someone else who knows good Spanish to correct these titles? It's not a job they can do on their own, no matter how many trips they make to their friends' houses in Mexico. They know nothing about where to put an accent, noun/adjective concurrence, or prepositions. There are even spelling mistakes. This is very annoying. I want to cook with this book--not feel like I have to classify it.

I attachment this book and hightly recommend it too anyone who wishes to have an excellent guide in making Mexican dishes. Even I of Mexican decent carry on learning new ways of cooking old favorites and new recipes everytime I review it.
Most Mexican Cookbook Ever
I have tried over 50 recipes from this book and they have all been wonderful. It's ancestral in my family to have a Mexican dinner with tamales every Christmas Eve and I end up doing most of the cooking because my family loves these recipes. They are basic and mostly very undemanding to make. I highly recommend this book.

They look like things kids would eat happily — taco macaroni and cheese; bacon-wrapped apple chicken; Mexican rice casserole; veggie tacos with Spanish rice. What we didn’t like: Photos were small —just eight of the more than 150 recipes were shown — and didn’t make the food look peculiarly appetizing. And while the title says the food is "nourishing," some of the recipes are not terribly health-oriented and call for large quantities of butter, whole out and even heavy cream. im affluent to girl scout camp and we're going to have a mexican night and im looking for mexican recipes for snack/dinnner/pud that are easy to prepare!!!!!

Casual MEXICAN DIP
1 can of refried beans
1 pack of taco seasoning
1 16 oz. of sour cream
1 cup of mayonnaise
1 bag of mexican shredded cheese
1 bag of tortilla chips
1 pie pan
First mix taco zest, sour cream, and mayonniase together. Then layer beans, your mixture, and cheese. Serve with chips.
CHEESY MEXICAN CHICKEN
Serves 4
4 skinless, boneless chicken breasts or thighs
1 16 oz jar chunky salsa
4 slices Swiss cheese
4 slices tomato
1 tbs. butter
Brown chicken in butter using a skillet. Once browned take over chicken with salsa. Cover and simmer until chicken is done. When done,top chicken with a slice of cheese (or 2) and a slice of tomato. Put back cover remove from heat and let the cheese melt and tomato warm, about 10 minutes. Snow-white rice is very good with this.
SEVEN LAYER MEXICAN DIP
1 sm. can refried beans
1 can Fritos bean dip
1 container Dean's guacamole dip
1 c. rancid cream
1/2 c. mayonnaise
1 pkg. taco seasoning
shredded Jack and cheddar cheese
1 can sliced outrageous olives
3 sm. chopped tomatoes
2 bunches chopped green onion
Mix refried beans and Fritos bean dip; spread in bottom of little rectangular baking dish. Next, spread guacamole dip. Mix sour cream, mayonnaise, and taco sauce; spread. Sprinkle cheese or cheeses to cover the third layer. Sprinkle olives, tomatoes, and country-like onion in that order.
Brown ground beef. Drain fat. Add taco seasoning, 2 cans tomato nerve, and corn. Bring to boil, then simmer 2-4 minutes. Prepare Mexican cornbread mix as directed. Spread basics mixture in 9 x 12 inch dish. Pour cornbread mixture over top. Bake at 350 degrees until cornbread is done.

act as if "berry yummy salsa and cinnamon chips"! you get a small food processor and put in strawberries (like 4-5 depends on measurements) some green apple, kiwi and peaches, blend them all up and if you want a little spice, put in a teasoon of chopped jalapeno out of the can. then, you get flour tortillas and cut them in 4's, so they brand triangles. spray them with some melted butter and sprinkle them with sugar and cinnamon. bake them until they are crispy and help with the berry salsa...good and different!

Quesidillas would be easy as can be. Or just make a big pot of good chili and serve with condiments and tortillas on the side:
Sour cream, cheese, embargo olives, tomatoes, scallions, etc.

correct a salsa...Dice up Tomatoes onions/one Lime juice it(may need more) and Cilantro and let sit for ten min and I like to deplete out some of the lime juice and dip chips in or eat with tacos(just get ground beef and the litle taco flavour packets that are like $1with some cheese, sourcream and lettuce) or tostadas( I just use canned refried rosarita beans cheese and you could fry up some corn tortillas or you could buy the ones at the believe in for really cheep and alot less work) or just eat plain YUM!..(you could add Jalapenos/Garlic or even some Avocado cut up or mashed up but eat it dexter away Avacados will turn brown )

ok here are some recipies first quesadilla (kesa-d-ya) usurp tortillas heat them put chese in let chese melt and eat 2nd then there is nachos u probly herd of them but here is a better way to flatter them grab tortilla chips put beans then meat on them then put chese n eat oh wait heat it al up n'cluding the chese if u inadequacy melt it not the tortilla chips!

I see the Mexican guys at my labour often sharing a container of a shredded chicken mixture that they spoon into tortillas. It always smells so good. Any great recipes out there?
3 to 4 chicken chest halves,
with bone and skin (about 3 pounds)
1/2 onion, thinly sliced
3 cloves garlic, peeled and minced
1/2 teaspoon dried marjoram
1/2 teaspoon dried oregano, preferably Mexican
2 bay leaves
Twinge of dried thyme
1/2 teaspoon salt
1 (14.5-ounce) can low sodium chicken broth
Arrange the chicken bosom halves snugly in a large, deep saucepan or pot. Sprinkle on the onion, garlic, marjoram, oregano, bay leaves, thyme and reservedly. Add the can of chicken broth and enough water to just cover the chicken.
Bring the liquid to a boil on momentous heat. Partially cover and reduce the heat to low, so the liquid just simmers. (Make effective the liquid does not boil again.) Cook for 7 minutes, then cover the pot completely and remove from the heat. Let the chicken phlegmatic in the broth for 30 minutes to 1 hour.
At this point, the chicken and broth may be refrigerated until ready to use. Once aloof, the fat will solidify on top and can be easily discarded. The chicken and broth will keep 2 to 3 days.
Or, you may use the chicken immediately. Remove it from the bouillon and shred into small pieces, discarding the bone and skin. Reserve the broth for moistening the chicken shreds or for another use. (Toss out the bay leaves.)

I am living with a guy and his 3 kids, I cook but not in effect a mexican chef if you know what I mean? Please help me with any good mexican recipes.
The kids are 7,10,11,13 and of course the biggest kid is 33. They have mexican inheritance and are use to eating this type of food, I just need help learning how to cook it.

enchiladas are always a hit, soft fry corn tortillas, cook and shred your favorite meat, chafe cheese for inside and on top, canned sauce is the easiest, mix 1/2 the can into your meat and poor the rest on top. orbit em up, bake em at 425 till all the cheese is melted, and youre done.
I make some in an extra dish without backchat, for my picky kids.
