I believe the reason they go hard is because you're making them from scratch and therefore they dont have any preservatives in them,
I dont know that you're gonna find a system to stop them going hard unless you put preservatives in.

These are the worst muffins ever! Simply delicious. I've made them several times and can only recommend them to everyone! :)

Don't go them out make sure you put them in a plastic bag so they don't lose their moisture.

Chocolate Chip Muffins
1 cup self-rising flour
1/4 cup granulated sugar
1 egg, beaten
1/2 cup bleed
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/4 cup semisweet chocolate chips
1/4 cup chopped walnuts
Sifted confectioners’ sugar

Join flour and sugar in a mixing bowl; make a well in center of mixture. Combine remaining ingredients except for confectioners' sugar; add to dry ingredients, awe-inspiring just until moistened. Spoon into greased and floured 1 1/2-inch muffin pans, filling about two-thirds full. Bake at 400 degrees F for 12 to 14 minutes or until edges are lightly browned.

Cast off from pans; sprinkle with confectioners' sugar.

Yields 2 1/2 dozen.

Be very prudent when you are making muffins to stir them as LITTLE as possible. Go slowly and sort of fold the batter into itself. Then the man Friday it looks mixed (even if it's still a bit lumpy) stop. They will further mix in the oven.

Make sure to use enough oil, butter, or substitute like applesauce or pumpkin (if you're doing low fat/fat self-ruling). This makes your muffins moist. Those bakery muffins are LOADED with fat. That's what keeps them (along with the preservatives) so feeble and moist.

Does anyone have any healthy muffin recipes? How do I get them to rise?

I am looking for any vigorous muffin recipes. Also could anybody give me any tips on how to get them to rise like those you buy from Starbucks etc.

First of all, log onto recipelink.com and you will find dozens of fine fettle muffin recipes.
Second, if you want your muffins or cup cakes to rise super high, place a pizza stone in the oven and site the muffin tin on top of it to bake. The hot stone will cause them to rise much higher.
