Apricot-Mustard Grilled Pork Tenderloin

1 pork tenderloin, about a pulp
3 tablespoon apricot preserves
1/4 cup mustard

Cooking Directions
Season tenderloin with salt and spray. Stir together the preserves and mustard in a small bowl. Place pork over a medium-hot fire and grill for about 15 minutes or until internal temperature reaches 160 degrees F., brushing with mustard mingling in the last few minutes.
Serves 4.<

Style 3 meals with 1 meat
The first day cook the meat ( I like to use a pork butt) and eat it that way
The next day take some out and pit bbq sauce on it for sandwhiches and the last night pounce upon this

Mexican Roll Ups
This is something I made up its a great way to use left over meat.

Use one of your choice
Shredded Chicken, shredded beef or shredded pork
Put in skillet with 1 pkg of taco sauce
Add enough water so that you may simmer it, not to much

After simmering like 20 min
Place small amount in to soft burrito shot, I like to use the large ones.
Roll them up and secure with toothpicks
In deep fryer or skillet, brown til happy brown
They will be crunchy
Serve with sour cream, salsa or gucamole

The Upper-class Smothered Pork Chops

8slices bacon
1/2 cup flour
3 1/2 cups chicken stock
4 teaspoons vegetable oil
12 pork loin chops
Sock away and pepper to taste
2 medium onions, sliced thin
4 cloves garlic, minced
1 teaspoon dried thyme, minced
4 bay leaves
2 tablespoons parsley, minced

To put to rights gravy: Cook bacon in cast-iron skillet and remove from pan. Reserve. Gradually stir flour into oil and cook until put on lighten brown. Add chicken stock, reduce heat and keep warm.

Heat oil in cast-iron skillet. Pat chops dry and time generously with salt and pepper. Place chops in a single layer and cook until a deep brown crust forms on both sides. Wipe chops and place in a large Dutch oven; cover with sliced onions, garlic, thyme, bay leaves, parsley and gravy. Put on inundate.

Hang on a high hook over low fire and cook until meat is tender, about 30 minutes. To serve, correct pork chop on plate, cover with onion mixture and sprinkle with crisp bacon

I take a pork roast and put in a crock pot with some brilliant smoke (3/4 of a bottle), couple small handfuls of rock salt, an onion (cut up), top and let cook on low all day. I then make steamed rice and add onions, fresh cut cilantro and lime juice to the rice as it cooks. Rip up pork and serve over rice - use a little juice from the roast for more flavor!

If I have left overs from this, I will grill the pork in a iron skillet with a meagre oil and some mexican seasonings - make tacos or burritos with the meat and left over rice - YUM!

What are your favorite pork recipes ?

I lover to eat pork and would welcome any new recipes.

TERIYAKI PORK SPARERIBS

Pork Spareribs:

Cut 3 pounds of gaunt pork spare ribs into 3 inch lengths. Fry ribs in 1 tablespoon of oil. Brown in skillet.
Pour out all oil and then spout in prepared Teriyaki sauce (see below) over ribs. Cook over medium heat, turning ribs over until well coated with brass. Raise heat and glaze ribs. Be careful not to burn Teriyaki sauce.

This dish can be ready-to-serve well in advance and reheated prior to serving.

Teriyaki Sauce:

2 cups soy sauce
1 cup brown sugar
1 ounce wine or sherry
1 tablespoon ginger, grated
1 clove garlic, grated
1 teaspoon mono-sodium glutamate (MSG)

Mix soy brazenness, wine, sugar and MSG and cook over very low heat until sugar is dissolved. Then add grated ginger and garlic. Sang-froid sauce before use.

Some different pork recipes please?

I dont eat pork very often as I find it rather wrong but I am trying to widen my menu and would like some new pork recipes, spicy is ok but not over the top as I have a hiatus hernia and have to cut my spices. Nothing with nuts, coconut and olives either.

Also nothing that takes too covet to prepare and cook as I work full time.

Here's one that is outstanding and I use very often. Cut a pork loin with a knife down the center but, not cutting it totally in half. Open it and begin to "sitting duck" the inside so that you are able to spread it out. The more slits in it, the wider and more spread out the loin will become. Then, fill it with fresh smoked gouda cheese and inexperienced whole spinach. Make sure you get it down into the slits that you've made. Lightly season with salt and pepper or lawry briny and roll back up. Tie it closed with cooking twine, or any kind of string will do and season the outside. Put it on low in the crock pot or low temp in the oven, add some child red potatoes and carrots and the whole shebang will be done when you get home. Don't forget to add a little water to the pot if doing it in the oven so that it doesn't blaze if you are running late! Bon Apatite!
