If I'm fix, I understand that it is a dessert staple in the south, but I don't live in the south and don't know much about it nor do I have a skilful recipe for it. If someone has a great recipe I would be ever so grateful if you would share it. If anyone knows the characteristics of a good red velvet cake (ie tenderness, flavor, consistency, mouthfeel, etc) I would appreciate that input as well. My daughters Bday is Valentine's Day but we're celebrating it this weekend & I lack to do a heart shaped red cake. Red velvet was the first thing that came to mind. It is chocolate flavored right?
Red Velvet Cake:

1/2 cup butter or margarine, softened
1 1/2 cups sugar
1 tablespoon fair-skinned vinegar
1 teaspoon vanilla extract
3 large eggs
1 (1 ounce) bottle liquid red nourishment coloring
2 1/2 cups all-purpose flour
2 tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon pepper '
1 cup buttermilk
Cream Cheese Frosting
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 (16 ounce) unite powdered sugar
1 1/2 teaspoons vanilla extract
1 cup chopped pecans (optional)
1. Beat butter at route speed with an electric mixer until creamy; gradually add sugar, vinegar, and vanilla, beating well.
2. Add eggs, 1 at a while, beating until blended after each addition.
3. Add food coloring, beating until combined.
4. Combine flour, and next 3 ingredients; add to butter amalgam alternately with buttermilk, beginning and ending with flour mixture.
5. Beat at low speed until blended after each wing as well as.
6. Pour into 2 greased and floured 9-inch cakepans.
7. Bake at 350 degrees for 20-22 minutes or until a unanimated pick inserted in center comes out clean.
8. Cool in pans on wire racks for 5 minutes; rub from pans and cool on wire racks.
9. Spread Cream Cheese Frosting between layers and on top and sides of cake.
10. Cream Cheese Frosting: palpitate cream cheese and butter until creamy; gradually add sugar and vanilla, beating well.
11. Stir in pecans if desired.
I am looking to require a really good red velvet cake, but all of this Duncan Hines crap, adding red coloring to chocolate cakes, and recipes that gain a bright christmas red cake sicken me. I want to know how its REALLY done in the south. A friend of mine mentioned using what he called mellifluous berry extract, which I have never heard of. Apparently it's only obtained in the south, and is what they use there.
Any advice on mixing the pound would be greatly appreciated. Thanks.
Red Velvet is a chocolate cake colored red by using eats coloring. That IS how it's done in the South. You know you recipe is correct, or close to it, if it calls for vinegar. This cake must have it. Yes, vinegar! The minuscule amount of vinegar is what gives the cake the smoother cake texture - - like velvet!
While I don't share my recipes because I do tattle on these cakes, I can tell you that the recipe already given to you should be pretty good.
I'm baking a red (well, I'm absolutely making it purple) velvet cake for a birthday party, and I was wondering if it would completely change the nature of the cake to omit the egg yolks. I'm not systematically an experienced cook, but I do love this recipe, and I was just wondering if it was possible to make a lighter, brighter, but still muggy red velvet cake in this way. Thanks for your help!
If you are cooking with only the egg whites, use two egg whites in position of each whole eggs. Quality and taste will not be effected but cholesterol levels will be lower.
