Vegetable recipes?

I am having a stupendous Thanksgiving this year and am looking for other vegetable recipes, other then the traditional green bean casserole anyone have any ideas? My family categorically loves brussel sprouts so if any one has a unique way of making them please share

As far as brussel sprouts go, I just steam them and then toss with a little butter and lemon pepper sauce. And for a healthier option, I skip the butter.

Anyone have any creative low-calorie vegetable recipes?

I've found a few to try on opposite recipe sites but I'm looking for your tried and true recipes that even anti-vegetable men (ie: my husband) will like.

Not too many ingredients please. Most vegetables are overpriced here so I don't want to waste any with untried recipes.

Anything in the cabbage relatives (kale, cabbage, brussels sprouts) can be braised with a little prosciutto ham and a splash of chicken consomm, and sprinkled with parmsesan cheese for a hearty dish that'll curl your toes.

Another easy fetich is spaghetti squash. Cut it in half and roast it in the oven, then use a fork to pull out the stringy meat. You can spice this with butter, or marinara sauce, or a sauce of butter, lemon juice, capers, chopped tomatoes, and peppers.

Parsnips are a search vegetable, but when cooked they have a texture a lot like potatoes. Cut them up and roast them among some red potatoes and serve together.

Diabetic and looking for great vegetable recipes?

I am not vegetarian, nor vegan, but I am diabetic and cannot have "pure" foods like potatos, white flour, pasta. I'm getting bored with most of my recipes. Could anyone give me some absorbing, fun, healthy vegetable recipes. They would be perfect if they were also quick, but not a must. Thanks for your help.


I, too , am diabetic. I also find it toilsome to find recipes that don;t call for flour, sugar, rice, and potatoes. I do have a great recipe using broccoli and cheese, though it does call for a microscopic flour (maybe there is a soy substitute for flour?). For this size, you will need a large stew pot.
(May be cut in half)

Take two broccoli crowns and simmer them in 2 large (the economy size that you find on the in the grocery store that has the "institutional size" servings) cans of chicken consomm until the broccoli is tender. Meanwhile, in another smaller pan, melt 1/2 stick butter or margarine. Add flour to restore b succeed a roux:

Once the broccoli is uninitiated, slowly add some of the liquid from the broccoli/broth mixture into the roux until the consistency of pie curst. Add about 1/2 cup of tap. Pour this mixture into the pot with the broth and broccoli. Add 2 packages of cheddar cheese and stir until all is mixed together. If it is a Lilliputian lumpy, don't worry, it will even out when you finish simmering for about 30 minutes. Be careful not to burn it, though. Keep an eye on it and stir often. This makes the most delightful broccoli cheese soup I have ever eaten. Here are some more ideas:
