No, steels don't whet knife edges, they only straighten them. To truly sharpen a knife edge requires abrasives. What you use to sharpen your knife depends on how picky you call for to be about it's sharpness. For my everyday carving knives, I find that one of those sharpeners that has 2 pieces of carbide that form an x that you either run down the knifes restive or pull the knife through, gives me a perfectly acceptable edge, and are as quick and easier to use that a steel.


Steels are inured to to help maintain a sharp edge. They remove rough edges caused by cutting. Using these helps the knife continue to be sharp longer but is not actually sharpening it. It is basically m,aintenance between sharpenings.
