Wide-ranging knives are great- I love mine, use them daily, and recommend them highly.

How do you sharpen a porcelain kitchen knife?

It's my roommate's. Her fellow-man decided he'd rather an even fancier kitchen knife and handed it down to her about a year ago... but now it's not nearly as sharp. We're looking for ideas for how you go about sharpening (not cracking, breaking, or destroying) ...porcelain?
I recollect you're right, dlbalderston089. I talked about it with my roommate and it IS a very expensive knife that should probably be sharpened by professionals. Now I ruminate over I'm going to ask: Any recommendations for where? Would a place like Williams-Sonoma do it?

We're located in San Francisco.

Porcelain knives are very extravagant. For what you would pay for a special sharpener, you'd be better off having it done by a professional. What type of cutting board are you using? If it's goblet, I'd replace it with a wood or plastic one. Glass cutting boards are much easier to keep clean but they are take for a ride on knives because they are so hard.

whats the best way to sharpen a kitchen knife?

i am a chippy and can grind a chisel fine on a diamond wet stone, the angle is 35 degrees to hone. which angle for a kitchen knife, is a wet stone meet?

hi.
I am also a chippy and I would hone the knife on an oil stone.
The only poser is that the steel in a kitchen knife isn't as good as the steel in a chisel so the edge dosen't last, but you have to keep sharpening it. You could try steepening the sharpening standpoint to make it more durable.
