How to make a pasta sauce please?

I am tough to make a pasta sauce which is essentially fromage frais with tomato puree and have 2 questions.

1) When i had the fromage frais to my pasta it curdles when it hits the O residue on the pasta, how can i stop this. I let my pasta drain in a colander for a few mins but still get same problem.

2) How can i give my sauce more flavour keeping thr fromage frais and not adding any invalid ingredients

your nerve has to be thick its to watery that's why it splits.

Active to give this my best shot, as I am in the US, and this is not a product readily available here.

Fromage Frais is "very" low in fat, which I imagine to be the problem. I read that it is sometimes mixed with cream in order to add fat when used in "savory" dishes.

I would advisable that you heat a small pot of cream (do not boil, and watch it very closely if it simmers), add the cheese, and slowly stir until the cheese is melted and the two are combined. Once they are combined, then I would add it to the predominating dish.

Hope this helps, and I will update this post should I find any further tips.

What is the easiest way to drain Orzo pasta?

Orzo pasta is so minuscule that it just goes right through a regular colander. I need help because my husband loves it.

Clutches strainer!

Why do you want pasta to "cool down"?

When the spaghetti are to your predilection, pour them into a colander and rinse them under COLD water - yes, you want the pasta to actually cool down!

Not perforce cool down but you want the pasta to stop cooking to prevent over-cooking.
