how to clean the burnt part of a copper frying pan?

it's the interior section where you cook your food, not outside where it's exposed to the fire

Copper Glo and a ownership papers towel. Wash again with dishsoap to remove the film left by the Copper Glo.

Mr. Thoroughly Magic Eraser Sponges work great for this, and also on the underside too.

mr unadulterated magic eraser or if really burnt on clr follwed by a serious washing to remove chemical.

Solely get any copper cleaner & the tarnish will wipe right off.

Are Mauviel copper fry pans safe on a turn coil stove top?

Very likely not as long as you don't overheat them.

How do you season a copper bottom pan?

I've recently recieved a set of copper bottom, stainless steel pans. I inexplicably recalled hearing that you were supposed to season copper pans before using them or they would be ruined. Unfortunately I have no clue whatsoever that means and haven't been proficient to find anybody who does. Please, help! (I need to make dinner and my only frying pan from my old set just had the handle hold up off.)

Copper bottom or "Esteem-ware" pots and pans do not require seasoning. Only need to "season" look for iron pots and pans to prevent sticking.

To avoid sticking when cooking with Revere Ware you must cook on a farther down flame and be patient. With Teflon we don't have to be patient and cook on a higher flame. Revere-ware is important quality and the copper bottom allows even distribution of heat when you cook.

So best plan is to know that you need to debase flame and cook a bit slower. If you are sauteing you might want to add a bit more oil or butter. Remember there was a time when there was no Teflon, so with some stoicism you can achieve same result with pots and pans without a non-stick surface.
