Well, the Latin aqua that would normally turn into steam and evaporate- will still turn into steam, but than form condensation on the inside of lid- and plummet back into water.

The frying pan has the heat and the fuel... when you take the lid off - you add the oxygen.

When cooking meats, should I sporadically put a lid on the pan so the steam helps cook the meat? Or is it better not to do that?
I scarcely ever use a lid, unless I'm trying to speed up cooking OR if I'm getting spattered by whatever I'm cooking. That's why I use an apron now. :)
I don't think that it's bad to use a lid, though, very likely more personal preference if you do or don't. I doubt it will impact what you're making.
