SOUTHERN FRIED CATFISH

1/4 c. flour
3/4 c. yellow cornmeal
1/4 tsp. garlic coat capacity
2 tsp. salt
4 catfish fillets or whole dressed catfish
Vegetable oil

Combine flour, cornmeal, garlic comminute and salt. Coat catfish with mixture, shaking off excess. Fill deep pot or 12-inch skillet half full with oil. Stimulate to 350 degrees. Add catfish in a single layer, and fry until golden brown, 5 to 6 minutes, depending on enormousness. Remove and drain on paper towels.
VARIATION: Light catfish. Pan fry in 1 tablespoon vegetable oil in a non-jut out pan or oven fry at 450 degrees, drizzling catfish with a tablespoon of oil


Pan Fried Catfish Formula

4 (8-ounce) catfish fillets
1/2 cup yellow cornmeal
1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon creole sauce
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
3/4 cup milk
6 tablespoons unsalted butter
Lemon wedges, for garnish

Drench the fillets and pat them dry with paper towels. Mix the cornmeal, flour, salt, creole seasoning, paprika, and bespeckle together in a shallow dish. Pour the milk into a second shallow dish. Dip the fillets into the milk and then into the cornmeal medley, coating them well and shaking of any excess.
Heat 1/2 the butter in a large skillet over high kindle, and fry 2 of the fillets for about 3 minutes on each side, or until the fish flakes easily when tested with a fork.

Transfer the fillets to a serving plate and keep warm. Repeat with remaining butter and fillets. Serve immediately, garnished with lemon wedges.


In a fat skillet heat some oil (corn, peanut, canola) Just enough to cover the bottom. Get it hot but not smoking. Dip the catfish in beaten eggs and then Sports line-up them in cornmeal. Gently place them in the pan. One at a time or you will lower the oil temperature and the fish will get soggy. When the cornmeal is a prosperous brown flip the fish over to cook the other side. Don't overcook it. It should flake easily away from the bone but not plummet apart. Drain the pieces on some paper towel and serve with your favorite sauce.
I like unfledged lemon, no sauce.
You can also add salt, pepper, garlic or cajun spices to the cornmeal for added flavor.

I use canola oil & a wide 2 -2 1/2 inch devious frying pan.
Add oil & turn flame up to med high.
In a bowl mix 1 cup of corn meal & 1 cup of flour. Add seasoning -lemon sprinkle, garlic powder & black pepper.
Rinse fish with water & place in batter until en masse coating.
Once oil is hot (when a drop of water dances ontop) turn flame down a little bit.
Add fish & cook until a promising color turning once.
Take fish out & place on a plate lined with paper towels.
If desired sprinkle a teensy-weensy more lemon pepper on top.

4 boneless skinless chicken bosom
2 cans Campbell's condensed golden cream of mushroom soup

Season and flour 4 chicken breasts and fry in skillet with vegetable oil cultivate done.

Drain and remove excess grease from skillet.

Combine chopped onion, milk, Campbell's condensed gleaming cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.

Seethe on medium heat till onions are soft.

I need good SIMPLE recipes for pan fried or baked Tilapia and Salmon.?

Please, precisely a few ingredients. I don't like tartar sauce or that mayonaisse-type sauce that some restaurants put on their fish. I don't like to get prodigal with recipes.


I like to bring pressure to bear on fresh lemon on mine and fresh dill.

I also like to use my blackened seasoning and sprinkle it on and bake @ 350 degrees for about 15 minutes. Tilapia is so thin it does not take protracted at all.

Tilapia has such a nice flavor on it's own you do not need to terribly much or it overpowers the fish.

Now salmon I like to get some brown sugar and soy audacity. Make a marinade and soak it for up to four hours or overnight if you can. This is a classic bourbon sauce without the bourbon. If you lack bourbon add it too.

If I don't use the brown sugar and soy sauce I do the same with Salmon as I do Tilapia.

Place the Salmon on a trestle and bake them for about 20 minutes @ 350 degrees.

For the Tilapia you can also fry it. It does well in a egg, mustard and hot sauce bath. Dip the fish in the egg bath and then elapse in seasoned flour. Fry to a golden brown. The hot sauce will not be detected and the mustard allows it to brown delightfully. Good enough taste so you don't even want the tarter sauce or mayo sauce.
