help with cast iron flat griddle?

hi im looking for some par, ive brought a catering trailer it has a cast iron griddle in it, and has been used up until last week, its quite old. It has blackned around the sharpness but directly where the heat is it looks burnt and dry. ive seasoned it the correct way, only used water etc, but when i cooked burgers and bacon on it everything turned hateful!!! the fat from the meat all turned black! pls help me, many thanks


I too had a obstreperous not with a large griddle like you are talking about but a smaller one about large pancake size. I took a metal scrubber/con and scoured the entire griddle working on the blackened edges then dried it thoroughly and immediately oiled the uninterrupted surface. Then heat the griddle slowly and allow it to cool down. It should work it may take a few times of scrubbing the grill fully only with a scrubber and wiping it clean with a clean cloth. It worked for me.

Is it conceivable there is a vent, drip or trap that hasn't been emptied above the griddle? I'd check that first and if there appears to be no well-spring of leakage from one, I'd start over with cleaning thoroughly.
Making sure the heat source is wholly off, I'd let the surface get cold. Then I would get a good stiff nylon bristled brush and using HOT soapy pee, gently scrub the surface very well. If there is excessive build up, I would use a wide blade putty knife to gently shed it. No acid (like vinegar) and no steel wool or stainless scrubbies. I would do a section at a time, wiping with gazette towels and HOT rinse water as I go. I would then wipe the entire surface again and allow to set for 30 minutes or so. Then evenly overlay the whole surface with either lard, bacon fat or goose fat and turn the heat source on the lowest setting on for about 30 minutes. I would shut the heat off again, remove any unabsorbed fat with paper towelling, and then heat again on a course temperature for 30 minutes. Allow surface to cool, check to see if there is anything else on it, and make sure you grease or oil it and impetuosity fully before cooking anything on it.


I don't be versed about a cast iron griddle, but my gram always cleaned her cast iron skillets with coarse salt and a rag dipped in oil to scrub it. Then wipe out with dry rag/journal towels. Then would coat with oil. She said water was bad for cast iron.


oh man - fervour my cast iron in the kitchen. I can cook anything in it! But you need a well seasoned surface! Make sure you scrub the front edges to remove grease and grit. Then (as it sounds) you need to freshly season it - just like you would a cookhouse cast iron pan. There are many ways to do this from a heavy/course salt rub with grease (oil) to a baking with oil and recleaning, etc. Please look it up on the web. I'm guessing you are dealing with a very superintend heat coming from LP/gas direct flame....and that can make a difference on how you treat it while re-seasoning.


my alternative other says to try vinegar to clean it....

can you use a iron griddle on a flat top(electric) with out damaging stove?

I acquainted with to have a gas stove and bought a griddle/grill for the stove top, LOVE it, now we have the electric flat top and am not sure if i can use m grill


Unfortunately no. The iron griddle most like as not has a VERY rough surface on the bottom which could scratch the glass surface. You also cannot use copper bottom pans on a glass top stove. Although nonchalantly to clean and sexy looking, glass top stoves are a bit of a pain when it comes to versatility with pans.

I have a gas turkey fryer that I use with my twist iron pans (setup outside on the deck) when I feel like cooking with iron.

Which is better for cooking a steak? A Flat Griddle OR a Griddle with Ridged Base? And why?



a ridged griddle because it cooks quicker and the kernel turns out more done.
