Philly steak & Cheese cooked on a Griddle-Q Stainless Screw up one's courage to the sticking point griddle, Designed for gas grills

I have found that 1/4" thick hot rolled knife makes a great pancake griddle for stove top use, but I am concerned that the hard surface coating on the steel may be toxic, signally when heated. The surface is very hard, smooth, and inherently non stick. Is it OK to cook on properly cleaned and acclimatized hot rolled steel?
Yes, once you've made determined to remove any chemical coating it might have had in its "other life", you can use a sheet of steel for a griddle. If it was made specifically for use as a griddle, all you necessity to do is treat it the same way you would a new cast iron griddle: wash it before first use with warm water and a mild dish detergent and a open scouring pad to remove the wax coating put on at the factory. Then dry it well and season it with Crisco. The steel itsself you won't be masterful to make so hot that it exudes anything toxic. You wouldn't need to get it that hot anyhow.

I like medium-rare, and have a cast iron griddle.
unfortunately I have a halogen hob, but I'm not unflinching which heat setting to have it on to heat up the griddle. (or is it a case of the hotter the better?)
I like to warm up excite the skillet until a few drops of water dance when added to it. Then I put the steaks on there, seansoned with a little lemon fleck and then, I put it into a 400 degree oven for 20 to 40 minutes. The time depends on the size and supremacy of the meat. This technique makes even the cheapest cuts of meats taste great and makes them proposition. But basically, I keep the meat in the oven until it looks good to eat.
I'm talking about the Griddles that you see in Japanese steak houses. I have always wanted one of these to cook on and I wanted to see if anyone knew anything about these. What to look for, features, what make, tips and tricks? I want one that will be built into a counter about 36-48" wide and it seems like the gas versions are the way to go.

If you're talking about at ease use. it won't work.Homes don't have an adequate enough gas or electric supply for commercial cooking equipment In annex these puppies get extremely hot and need to either surrounded by non combustible material or so designed for zero- clearance installations
All in all it's a damned high-priced way to make one omelette
