how long should i steam large sausages in a steam table before cooking them on griddle to order ?

i am all set to start a vendor kitchen in a busy area. i am very green to this business.i was wondering the best way to fashion sausage before cooking to order? any help would be appreciated. thnx johnny d.

Please bring to light me you plan on cooking the sausage BEFORE you put it in the steam table. YIKES, honey, that's what steam tables are for. For inexperienced sausage I would definately start out with a thermometer-Anything smoked is already cooked and can be served hot from a steam table entirely or grilled after being in the table-BE CAREFUL!!!

What pots and pans should we avoid with a new ceramic top stove, particulalry cast iron and long griddle pans?

We decent purchased an LG ceramic top stove/oven and have heard a great deal of conflicting advice on what fair of pots and pans to avoid with electric stoves, partcularly the ceramic top types. The pans we would like to use are a large inclination iron Le Creuset pot and one of those long (18x30) rectangular griddle pans from Williams Sonoma, often hand-me-down for pancakes and other flat surface cooking, that would cover two burners on a normal sized stove. Would it be uncertain if I used these pans? Unfortunately, gas is not a viable option so suggesting that I get gas is not helpful. Also, there is not bridge between the elements on this cook top.

I cogitate on if you place your LeCrueset on the stove, rather than sliding and dragging it around, you will be fine. The main key is for your pans to have a flat bottom, and not be warped, to get even and middling heating.
