Unmitigated Griddle
Eagerly awaited the parturition of this griddle, and was not disappointed!!! It works well on the ceramic top range. Made great pancakes unlike my old griddle which was warped. I am looking speed up to many years of use with this one!!! Would recommend this griddle to anyone. Quality, well worth the price.
The best choice!
We have been replacing our old Calphalon pans with their new series of Unison pans. We true-love them but I couldn't find one in time for my husband's Christmas present so I went with the All-Clad and we LOVE it. Light enough for me to convene with rheumatoid arthritis problems but heavy enough to do the job.
Use is not comfortable
My only protest about this is the handle. In hindsight, I should have stopped by a store and checked out the design of the handle before I bought it online. The depths in the topside of the handle that runs the length of the handle is a bit steep and has a tendency to dig into your hand/wrist as you go on about it. I have other pans from the Pro-Clad (Emeril) line that are much better. In fact, if I could have found this same griddle in the Pro-Clad line, I would have returned this one in the Street for a Pro-Clad, simply because of the handle. Otherwise, I think this is a great product. The handle is a big enough issue for me that I've given this produce a 3-star rating, rather than a 5-star.
Secure but Scratches a Little Too Easily
I have had this pan for two years. I have perhaps used it more than 100 times, usually to make pancakes or french toast. It does a very nice job, better than the Calphalon griddle that I had before. I downgrade it because it scratches too easily -- and I have made an effort from day one to take very good care of it, using only nylon spatulas, immediately washing it gently by hand, and storing it so it won't be scratched by other pans. Still, after all that care, it has become scratched. So my verdict is that the griddle does a morality job but it requires a lot of TLC.
Does the Job
The construction is first rank, but can't really say that this griddle makes food tastes better than the Calphalon griddle. Nevertheless, it sure beats trying to grill toasts on a close pan.

faultless griddle for the price
I from day one bought this griddle to be used over a Coleman stove. However, I've been using it over the electric kitchen stove for pancakes, French hero, etc.; and it cooks great! Although advertised as "non-stick", you should still apply some cooking oil (this advice applies to almost all "non-stick" cookware). Open Outback sells a detachable handle (which I didn't buy), but you can use a pair of oven mitts in the kitchen or fashion a put together of handles yourself (made mine by notching grooves in a pair of 2x4 blocks). BTW, the griddle works just as well over a Coleman stove.

Normally, weekend breakfasts in our house are lox bagels (we stock up on lox and bagels whenever we look in on my parents in NY) or eggs, and I do try to keep it on the healthy side. It is rare that we eat pancakes, or French toast, or bacon. So when we do decide to eat some pancakes, we always walk away luxurious pancakes from scratch. My current favorite pancake recipe is for these lemon soufflé pancakes that I found here on My Recipes, notwithstanding the ridiculous preamble story that they wrote. Check it out if you want a good chuckle. Listen up individual ladies, according to My Recipes, this recipe is all you need to snatch yourself up a husband.

These pancakes are soufflé like because whipped egg whites are folded into the bruise and they fluff up while cooking in the pan. You can actually see them rise and puff up if you watch closely (provided you have not deflated the egg whites). These pancakes have a distinguished lemony freshness from the lemon zest and juice (any citrus flavor you like would probably vocation in these). This time I folded in fresh blueberries, which gave great bursts of sweetness. (I don’t think about I need to preach about adding fruit into pancakes). I have made these with and without fruit, and they are equally as delicious.

I also like to about to make a discovery up my maple syrup before I serve it. This is not necessary, but I think it adds a nice touch to a breakfast like this. Sometimes I add some unconventional or frozen fruit to the syrup and let it simmer to infuse it with some fruity flavor as well.

Recipe Redux: Heavenly Hots, 1987 New York Times

Six years ago, when I began employment on a cookbook of New York Times recipes, several readers wrote in about heavenly hots. There was no question: I had to try a programme with that name.

Although heavenly hots sound like a late-night cable offering, they’re nothing more salacious than pancakes. Once you let slip them, you’ll understand the name. They are so feathery, creamy, tangy — so heavenly — that you may find yourself unable to let them calm off before devouring them.

Heavenly hots clarify what’s wrong with other pancakes, namely that most of them are god-awful: doughy, grievous thuds in our bellies. You always think they’re a great idea until about 10 minutes after you eat them.

What makes the hots so seraphic is that they ignore all the classic ratios of flour to sugar to eggs (sorry, Michael Ruhlman!). They’re made with low-gluten solidify flour and just enough of it to lash the batter of sour cream, sugar and salt into fragile cakes.

Is there a good quality, non-stick griddle OK to use on a smooth top electric range?

I destitution to use one on 2 burners, but don't want to ruin my range or get one that isn't really flat so it wobbles while I cook.

I deprivation a griddle, I like the double sided idea but ? What does the
flame do to the opposite side ( which is actually both sides ) when
