I'm talking about the Griddles that you see in Japanese steak houses. I have always wanted one of these to cook on and I wanted to see if anyone knew anything about these. What to look for, features, what label, tips and tricks? I want one that will be built into a counter about 36-48" wide and it seems like the gas versions are the way to go.

If you're talking about proficient in use. it won't work.Homes don't have an adequate enough gas or electric supply for commercial cooking apparatus In addition these puppies get extremely hot and need to either surrounded by non combustible material or so designed for zero- consent installations
All in all it's a damned expensive way to make one omelette
