Baking bacon in the oven this way will produce the "best" bacon you will eat and less fat!!!! Microwave just crisps it up and it normally tastes terrible.


I have no view but this: Be careful with your oven. The grease will splatter, and it will smoke. I've tried it before, and ended up with some stinky bacon.

Do you have a recipe for mackerel with bacon, horseradish and watercress?

I worn to have a recipe for mackerel stuffed with horseradish and watercress and wrapped with bacon. I've lost it and don't know where it came from to begin with! Does anyone have this recipe? Or alternitively, if I just try to make it up can you recommend how I should cook it (how long/what temp/bake or grill etc)? Say thank you you! L


Smoked mackeral like any smoked fish goes wonderfully well with horseradish. If its unsmoked I contrive it goes equally well, mackeral being such an oily fish the horseradish would match it perfectly.

I have never seen this means, but I would recommend doing the following:
For smoked mackeral fillets, perhaps serve on a bed of watercress with a dollop of horseradish and crispy grilled bacon crumbled over the top of it.

For unsmoked mackeral, spread horseradish inside of the cavity and stuff with watercress. Wrap whole fish in slices of streaky bacon.

Now I think you could either bake or pan fry this. To pan fry, excitement some olive oil and a little butter in a pan, over a medium heat fry the fish until the bacon is cooked - all nice and brown and crispy. By this era the fish inside should be cooked.

To oven bake I suggest the same. By the time the bacon is crispy the fish by nature should be perfect.
