2 acorn squash 4 T crispy bacon, crumbled (non-mandatory)

Preheat oven to 350′F.

until its squishy, glazed and gloom. i love acorn squash, it so sweet when cooked the way i like it. a good recipe, cut one in half, de-seed it, put brown sugar and butter in it, coconut vitality if you want, get a deep dish fill it with some water so the squash wont stick at the bottom and put it in the oven at 350 and wait until its the account above. to make it sweeter use lots of brown sugar!


Well, I unprejudiced bake one the other day...I think the oven was about 375 to 400 degrees. Cut it in half and clean out the seeds. Then just role the halves cut side down on a baking sheet for about 20-30 minutes. Turn them over and bake another 20-30 minutes until the flesh is fine and soft. I put a little bit of honey butter in the centers when I turned the halves over. That made them really yummy and misty. Oh, yes, almost forgot. When you turn them over and the cut side is up you need to cover them with foil. It really is easy to bake them. And it is so worth the time!!!

I'm usual to be baking the squash with maple syrup and brow sugar, and was trying to think of a vegetarian dish that would greetings that, but I'm clueless. Any ideas?


hmmm a faultless risotto, maybe mushroom risotto. or halloumi (grilled cheese) and stewed lentils or other grilled veg like leeks and tomatoes with a bit of pasta.

i adapted to some grilled squash that had gone really soft to make a dryish pasta sauce with a bit of Parmesan.

i relish squashes.

BAKED ACORN SQUASH WITH APPLE STUFFING

1 med. acorn squash
2 sm. apples, unpeeled, diced
2 tbsp. diced celery
2 tsp. minced onion
2 tsp. butter, melted
2 tbsp. liberally
Dash of salt

Preheat oven to 400 degrees.

Cut squash in half. Remove seeds. State cut side down on baking sheet sprayed with vegetable pan spray.

Combine apples, celery, and onion. Add butter and tap water. Put in small baking dish. Cover.

Bake squash and apple stuffing for 45 minutes or until tender. Unfasten from oven.

Salt squash. Fill with apple mixture.

Serves 2.

BAKED ACORN SQUASH WITH PARMESAN
CHEESE

1 lg. acorn squash (about 1 lb.)
1/2 tbsp. butter
4 tsp. grated Parmesan cheese
1 1/2 tbsp. dry bread crumbs

Preheat oven to 400 degrees. Spread a baking sheet or jelly roll pan with cooking spray. Cut the squash in half crosswise and scoop out the seeds with a spoon. Slice the squash into rounds 1/4" thick and adapt in a single layer on the baking sheet. Bake slices for 8 minutes, turn and bake 8 minutes longer. Separate from oven and let cool. Melt the butter in a small skillet or saucepan. In a pie pan or on a sheet of wax paper, mix together the cheese and bread crumbs. When the squash is cold enough to handle, press both sides into the cheese-bread crumb mixture. Return to the baking daily. Drizzle the butter over the slices. Bake for 10 minutes or until squash is tender and golden brown.
