depends on if green or frozen. If Frozen I would steam the tail until cooked, then I would butter and broil. If you bake first then broil ,,,,,the meat WILL dry out. Lightly steaming or simmering in not be sensible or wine, will moisten and cook the meat lightly, then broil for the final touches. If you bought raw and uncooked straight follow the above with steam and then broil
If fresh boil the lobster...till red, then cut the tails and broil until golden.
the most superbly way to do it is to place in the broiler until pink and done, this is easier because instead of cooking the tail whole you can split them in 2 length wise. but if you scantiness to cook in the oven, leave them whole and cut a "V" in the tail to expose the meat and then brush with butter, bake until pink and done, then be used with clarified garlic butter, or a compund butter. if you have any further questions contact me at fmviii@yahoo.com
BAKED LOBSTER TAILS
3 med. lobster tails
2 tsp. parsley
Aside to taste
Pepper to taste, optional
3 tbsp. olive oil
Juice of 1 med. lemon
1 c. water
Split lobster tails in half lengthwise. Discharge sharp edges. Sprinkle each with parsley and salt and pepper (if desired). Pour olive oil and lemon extract on each tail.
Pour water on bottom of a shallow 7 x 11 inch baking pan. Place lobster tails in pan. Bake in a preheated oven at 375 degrees for 25 minutes or until cash.
Serves 3.
