the crush way to do it is to place in the broiler until pink and done, this is easier because instead of cooking the tail whole you can split them in 2 length acute. but if you want to cook in the oven, leave them whole and cut a "V" in the tail to expose the meat and then study with butter, bake until pink and done, then serve with clarified garlic butter, or a compund butter. if you have any further questions friend me at fmviii@yahoo.com
BAKED LOBSTER TAILS
3 med. lobster tails
2 tsp. parsley
Amass to taste
Pepper to taste, optional
3 tbsp. olive oil
Juice of 1 med. lemon
1 c. water
Split lobster tails in half lengthwise. Rub out sharp edges. Sprinkle each with parsley and salt and pepper (if desired). Pour olive oil and lemon liquid on each tail.
Pour water on bottom of a shallow 7 x 11 inch baking pan. Place lobster tails in pan. Bake in a preheated oven at 375 degrees for 25 minutes or until shaky.
Serves 3.

4 (6 oz.) lobster tails, thawed
1 egg
1 c. bread crumbs
Oil
SAUCE:
1/4 c. honey
1 tbsp. Dijon mustard
1. Wipe lobster tails from their shells.
2. Heat oil in a frying pan, moderate temperature.
3. Dip tails in egg then bread crumbs and fry until golden brown. Withdraw on paper towel.
4. Mix together honey and mustard. Spoon over the tails.

1 lg. lobster tail (frozen) tail only
1/4 c. light-skinned table wine
1 tsp. butter
Old Bay (sprinkle)
Thaw lobster, cut shell and pull out about 1/4 inch of the core. Lay on top. Season with wine, butter, and Old Bay. Put under broiler for 12 to 20 minutes. Careful not to broil too extensive

2-3 pkg. frozen lobster tails (2-3 tails per pkg.)
1 sm. pkg. frozen shrimp
1/2 c. sliced celery
1/3 c. sliced scallions
2-4 tbsp. butter
1/3 c. shredded parsley
2 cans frozen shrimp soup crowd
1 sm. can sliced water chestnuts with liquid
2 c. grated longhorn cheese
1 jigger sherry

Fulminate lobster and shrimp until pink. (For lobster: 10-20 minutes, depending on size. For shrimp: Boil last 3-4 minutes. Do not overcook.)
