My mom old to make a clam bake in the oven. Lobster, clams, shrimp, corn and potatos all in foil and then baked. But I dont identify how long to bake it and she cant find the recipe. I'm making dinner for my boss tomorrow and I could really use the answer. Please help!!
This is the only one I can find that doesn't instruct beach cooking. Most clambakes are made in the sand. I can't find one baked in foil. Good luck!
LOBSTER CLAMBAKE
2 Cups Pee
2 Cups of Clam Juice
2 Cups Chardonnay
4 pcs. Corn on the Cob cut in half
12 Cherrystone Clams
8 Red Skinned Potatoes cut into quarters
½ Cup of Butter
2 each 1lb Maine Lobsters split in half, cleaned and claws cracked
Method
Conjoin water, clam juice and wine into a large stock pot over medium high heat.
Add the corn, potatoes and butter to the pot. Envelop and allow to cook for 5 mins.
Add the cherrystone clams and the lobsters to the pot and stir together.
Cover and reduce impetuosity to medium.
Cook for 20 mins and serve.
To Serve
Pour the entire contents of the pot into a fat, deep serving bowl along with the broth.
Garnish with fresh lemon wedges and enjoy.
the most beneficent way to do it is to place in the broiler until pink and done, this is easier because instead of cooking the tail whole you can split them in 2 length about. but if you want to cook in the oven, leave them whole and cut a "V" in the tail to expose the meat and then send off with butter, bake until pink and done, then serve with clarified garlic butter, or a compund butter. if you have any further questions connection me at fmviii@yahoo.com
BAKED LOBSTER TAILS
3 med. lobster tails
2 tsp. parsley
Rock-salt to taste
Pepper to taste, optional
3 tbsp. olive oil
Juice of 1 med. lemon
1 c. water
Split lobster tails in half lengthwise. Wipe sharp edges. Sprinkle each with parsley and salt and pepper (if desired). Pour olive oil and lemon liquid on each tail.
Pour water on bottom of a shallow 7 x 11 inch baking pan. Place lobster tails in pan. Bake in a preheated oven at 375 degrees for 25 minutes or until affectionate.
Serves 3.
