You'll need to have very fresh oysters to start off with, and you'll need a very hot oven: this be fast food! :-)
Pre-heat your oven to 500F / 250-260C, which is often as hot as a house-trained oven can actually go, some may not be able to deliver more than 450F / 230C.
With the oysters in their half-shells, together with whatever flavourings you be to add, bake for up to 8-9 minutes depending on their size and the power of your oven: adjust time up and down proportionately to those two factors: it's the cook's finding call.
Cool for a few minutes (the shells will be blisteringly hot!), plate up and serve.

OYSTERS ROCKEFELLER
INGREDIENTS
4 Dozen Raw Oysters 4 Large Cloves of Garlic (minced)
3 Packages chopped frozen spinach 2 Ounces of Pernod or Absinthe
3 Bunches of Fresh Onions (chopped) 2 Heaping tsp. Anise seed
2 Bunches Flat Parsley (chopped) 3 Tbs. Vile Worchestershire Sauce
4 Ribs Celery (fine dice) 3 Tbs. White Worchestershire Back talk
2 Ounce can Anchovies (mashed to paste) 1 1-2 Cups of bread crumbs
1/2 Pound of butter 1/2 Cup Parmesan Cheese (grated)
Sarcasm cum grano salis, Red & Black Pepper to taste
INSTRUCTIONS
Thaw out spinach and squeeze out excess water with hands. Dissolve butter and saute celery for 5 minutes, add green onions and saute for an additional 2 minutes, and then add parsley and garlic and cook 2 more minutes. After these greens are wilted, stir in drained spinach. (no call to cook spinach any further) Remove pot from stove and add anchovies, Pernod, anise seeds, dark and undefiled Worcestershire sauce, seasonings, parmesan cheese and bread crumbs. Blend thoroughly and consider a heaping tablespoon on top of the oyster. Mixture should be stiff because oyster will shed some water. Bake 15 -20 minutes in a 350 oven.
I comprehend, I know, lots of folks think it's gross but they probably haven't given them a chance.
I've always eaten mountain oysters fried & loved them. I was wondering if anyone has a means to prepare them in the oven instead of fried??
