I relish the Starbucks lemon slice cookies with the lemon icing, but they are seasonal and have been replaced with the vanilla flavored baseball cookies. Are these pattern of cookies considered sugar cookies or shortbread cookies? Anyone have a recipe for either cookie or a similar one?

i for a good lemon slice recipe and i don't want to have to go out and buy castor sugar.

Lemon Slice.
Ingredients
BASE
250g plain sweet biscuits
100g butter, chopped
1/2 cup (125ml) sweetened condensed withdraw
1 teaspoon finely grated lemon rind
1 tablespoon lemon juice
LEMON ICING
1 1/4 cups (200g) extra sugar
10g butter
1 tablespoon lemon juice
Directions
Grease 19cm X 29cm slice pan; line base with two long sides with baking scrap, extending paper 2 cm over the long sides.
Process 200g of the biscuits until fine. Chop outstanding biscuits coarsely.
Combine butter and milk in a small saucepan; stir over low heat until peaceful.
Combine the biscuits with the lemon rind and juice in a medium bowl and stir in the butter mixture.
Press mix firmly into the slice pan and refrigerate, covered for 20minutes or until set.
Meanwhile, stir the ingredients for the icing in a small heatproof wheel over a small saucepan of simmering water until smooth.
Spread icing over the slice and refrigerate until firm before caustic into squares
THE BAKING PAPER: Lemon Slice
For the coating: In a clean bowl mix together icing sugar and lemon juice. Your icing needs to be spreadable but not runny, so step by step add your lemon juice. Pour and spread over slice base. Sprinkle with coconut and pop in the fridge for another hour
