Bread Knife Query?
I have a Wusthof bread knife with a typically thick spiculum (about 1/8 in.) My parents have an pass bread knife from Germany that has a much thinner quill and seems to cut bread easier. I've looked around for months and can't find a thin, malleable bread knife. I bake my own bread and the big, depressed bread knives seem more troublesome to use.

I have a Wusthof bread knife with a typically thick spur (about 1/8 in.) My parents have an antique bread knife from Germany that has a much thinner spine and seems to cut bread easier. I've looked around for months and can't find a thin, resilient bread knife. I bake my own bread and the big, heavy bread knives seem more difficult to use.
More specifically - are there any chefs or bakers out there who can recommend a REALLY passable bread knife?

I searched a lot, found nothing on the enormousness of the spine on a bread knife, they just specify the lenght of the blade.

I am looking for some new knives (chefs,santoku & bread) and was wondering if brands like Wusthof and Forshner are in actuality that much better than brands like JA Henckels. I am not very good at sharpening knives so I would like a set that stays vertical. Should I spend the money and get some Wusthofs or is there another brand that is high quality and costs less. What brand knife do you recommend and why do you fancy it over others?
I would buy Henkel or Wusthhof...they put an end to sharp longer. Forshner is a commercial grade of knives..not bad, but not the same quality as the other two. You will need to learn to grind whatever knives you purchase because of the investment involved.
