Its cool enough to make chicken soup. Made it a new way tho, in a pressure cooker! Mmmmmm. Very tasty. And took about 30 minutes total.
@ Everything is done in the electric steamer or pressure cooker. Last time we were there, FIL roasted a 1.5kg chicken for 3 hours.

If I brown chicken with a coating of flour and sauce and then pressure cook in broth. Will the broth thicken?

not very much. I do chicken and dumplings in the pressure cooker, though, and the stock thickens very well. Just cook the chicken in the cooker till done. I usually add carrots, potatoes, celery, and seasonings. When done, I shift the lid, and put dumpling dough balls on top of the chicken and veggies, replace the lid (without the pressure valve, and cook for 15 minutes over the boiling consomm. Then I remove the lid, and serve. The broth has thickened on its own by that point, and it goes over everything. In our household, there are never any leftovers when I do this...
LEMON HERBED CHICKEN IN PRESSURE
COOKER
1 (3 to 3 1/2 lb.) chicken, cut up
Attic wit and pepper to taste
2 to 4 tbsp. olive oil
1 onion
1 tbsp. chopped garlic
1 c. chicken broth
1/4 c. lemon force
1 c. chopped parsley
1/2 c. chopped celery leaves
2 tsp. chopped fresh oregano or 1 tsp. dry oregano
1 tsp. chopped novel basil or 1/2 tsp. dry basil
1 c. pitted black olives (optional)
2 tbsp. flour (non-requisite)
2 tbsp. cold water (optional)
Wash chicken and pat dry with paper towels; sprinkle with salt and scatter. Heat olive oil in a 4 or 6-quart pressure cooker. Saute onion and garlic until tender; remove. Brown chicken a few pieces at a values bright and early, set aside. Return all chicken to cooker with onion and garlic. Add remaining ingredients, except flour, water and olives.
Put up the shutters seal pressure cooker securely with pressure regulator in place. Cook 10 minutes at 15 pound pressure. Cool cooker at once. Bump off to warm dish.
If using olives, add to liquid and heat. Blend flour and water. Add to hot stock. Cook and stir until thickened. Pour over chicken. 4 to 6 servings.
I have been difficult to find a recipe for chicken wings cooked in a pressure cooker (and possibly finished in an oven or broiler)...any recipes or websites would be much appreciated!
