Yes, it can be done. Did an instruction directions come with your pressure cooker? It will tell you what pressure it is set to. The most common is 10 PSI, but some can be 5. A pressure canner can go to 15 PSI. The pressure of your cooker will determine cooking on occasion.

I will be putting this on my eye list. I just bought a corned beef for the New Year holiday and I don't remember ever preparing one before. My new husband loves it so I'm watchful to see. The only thing I know to do is to rub it with the spices it comes with and bake it like a roast. Maybe I'm evil so I'll be watching!

okay, this is what one recipe said to do to Make Corned Beef...

Boil water. Add salt and saltpeter, stir to melt into and set aside to cool. Place brisket in a large crock, zipper-style plastic bag or other non-metallic container. Discharge salt water over meat and add garlic, pickling spices and bay leaves. Meat should be submerged; use a weighted jar to repulse meat under pickling solution. Refrigerate or set in a cool place for 3 weeks. Drain and remove bay leaves before cooking.

Note 1: Saltpeter is known commercially as potassium nitrate and is against to give the meat a pink coloring.

Note 2: Bottom round roasts may be substituted for the brisket for a leaner corned beef.
