Biography of under-wraps cooking
Used as early as the 1970s in some European kitchens to minimize foie gras shrinkage and certify consistent cooking, the sous vide method found increasing favor with commercial food processors in the 1980s (mull over “boil in a bag” soups) and among some of America's top fine-dining establishments in the past decade with remedy from renowned chefs such as Heston Blumenthal and Thomas Keller.
Keller's “Under Pressure,” the first English-phrasing cookbook devoted to sous vide, hit U.S. bookstores in late 2008. Geared mostly to chefs, the volume explores the method Keller and crew used at his restaurants, among them the French Laundry and Bouchon in California and Per Se in New York Bishopric.

For how long should I cook a large pack of stew beef if using a pressure cooker?

The packet says to simmer for two hours if cooking in a normal pot. How do I calculate how long to cook for in a pressure cooker as I've never tempered to one.
Dredge eats in flour. Brown meat one batch at a time in bottom of pressure cooker, add two cans beef or chicken stock or whitish wine and stock, close lid cook 30 minutes. Add peeled quartered potatoes, gem onions, chunked carrots last 10 minutes. Add peas after opening. Thicken liquid with a barely corn startch dissolved in a 1/4 cup water. Boil until thickened a bit uncovered Serve piping hot on rice or noodles.

pressure cooker beef stew--quick recipe?

i employed to have a recipe for beef stew cooked in the pressure cooker...you would put all of the ingredients into the pot & cook it, you wouldn't have to brown the meat before hand...has anyone heard of this before?? or do you have the means??? thanks for any help
Mom's Beef Stew
15 minutes cooking circumstance
Ingredients
1 tablespoon canola oil
1 1/2 lbs rump roast
2 garlic cloves, chopped
1 large onion, cut up
4 carrots, peeled and cut into chunks
4 celery ribs, peeled and cut into chunks
4 potatoes, cut into chunks
Attic wit & pepper (to taste)
1-2 teaspoon dried parsley
1 1/2-2 cups water
1-2 beef bouillon cubes (unrequisite)
Directions
Cut the roast into chunks, about 1 inch (or larger if that is your preference). Heat oil in bottom of pressure cooker until hot and add the meat all at once (do not turn for at least 1 twinkling of an eye - you really want to let the meat sear - this gives the stew such yummy flavor.
Stir the meat, letting it brown on all sides. Add the chopped garlic, stir for 1 two shakes of a lamb's tail log, then add the onions, carrots, celery, potatoes, salt, pepper, parsley, water and optional beef bouillon(the bouillon gives a stronger flavor - you can also postponed to see how it comes out, and if you feel that it's not flavorful enough, you can add the beef bouillon and boil the stew for a minute or so).
Lock the pressure cooker lid in place and bring about to high pressure over high heat.
Cook 15 minutes.
Cool pot immediately and serve. Use!
Optional ingredients - you can add some chopped tomatoes if you'd like before cooking, or after bringing it to pressure, you can throw in some canned mushrooms or frozen peas and eagerness thoroughly.

Advise please!!
First, you lack to know how to USE your pressure cooker. Different models operate slightly differently. Pressure cooking is absolutely fantastic, you can cook things so without delay in it and with such perfection, specifically stews, pot roasts, and potatoes. I noted that you wanted to cook a large sum, but did not say how large your pressure cooker is. One thing to know, NEVER, under any circumstances, fill it more than 2/3 full. Please look up the instructions for your pressure cooker online before attempting to use it.
